Pengolahan ikan secara tradisional memiliki prospek dan peluang pengembangan yang semakin baik. Pengolahanikan secara tradisional sangat kompleks dan lebih banyak didasarkan pada konsepsi yang diwariskan secara turun temurun. Salah satu produk olahan ikan tradisional yaitu "Pedetan‟ ikan lemuru. "Pedetan‟ merupakan produk pangan sejenis ikan kering berbumbu tradisional Bali terbuat dari ikan lemuru yang diolah oleh masyarakat di daerah pesisir Kabupaten Jembrana Propinsi Bali (Singapurwa et al., 2014).

Indonesia merupakan salah satu negara yang memiliki berbagai jenis makanan tradisional hampir di setiap provinsinya, begitu pula Provinsi Bali. Makanan tradisional bagi masyarakat Bali merupakan salah satu budaya yang diwariskan sejak generasi terdahulu bahkan hingga sekarang. Makanan Tradisional adalah makanan yang diolah dari bahan pangan hasil produksi setempat, dengan proses yang telah dikuasai masyarakat , hasilnya adalah produk yang cita rasa, bentuk dan cara makannya dikenal, digemari, dirindukan, bahkan menjadi penciri kelompok masyarakat tertentu. Makanan tradisional khas Bali sekarang sudah mulai diminati oleh masyarakat lokal, baik wisatawan domestik ataupun wisatawan mancanegara. Hal tersebut dikarenakan rasa makanan tradisional Bali terutama yang berjenis lauk memiliki rasa yang berbeda dengan makanan jenis lauk dari daerah lainnya.

Carcinogenesis
Carcinogenesis covers molecular, biochemical and cellular processes that underpin this field. The complex nature of cancer means that a broad understanding of these processes is advantageous when designing novel preventative, therapeutic or diagnostic strategies. This book commences with chapters discussing cancer predisposition and pre-cancerous lesions.
