Syrian refugees are currently struggling to resume their lives far away from home. But even when confronting harsh conditions like those of life in a refugee camp or while missing family members left behind, a dish of home-cooked stuffed zucchinis can immediately elicit feelings of warmth and comfort and transform a foreign place into a welcoming home. This book is a collection of the recipes and stories that were shared with me by Syrians seeking asylum in Jordan during my time there.

This book is a delight and a celebration of everything that symbolises hope and connection. You just want to cook everything in it." Joudie Kalla, author of Palestine on a Plate, @pale...

A Taste of Home

A Taste of Home

A Taste Of Home was dreamed up and created by over 50 Syrian refugee families who have found sanctuary in the North of England. Through community meals, cooking workshops and neighbourhood gatherings, the people in this book have tried to integrate into their new home, while honouring the land they left. At many of these events, local people and refugees were able to bond, communicate and develop friendships over delicious, home-cooked meals. Food is such a central part of Syrian family life and each recipe comes with a story about the much loved homes these families have left. Syria is so much more than the destruction we see on the news; we hope that this recipe book helps capture a glimpse of the history and culture that created this beautiful country and its people.

The Art of Syrian Cookery

Arabic cooking is like Arabic dancing—vivid, exotic, enchanting. Seasoned with herbs and spices, moistened with olive oil and butter, rolled in cabbage and grape leaves, food no longer merely abates hunger but becomes a picture of fragrance and charm to satisfy sight, smell, and taste. There is no difference between Syrian and Lebanese foods. In America these foods are most popularly known as Syrian foods. However, since Syria was under the rule of Turkey for centuries, some of the drinks and foods are Turkish. This is why the coffee served in Syria and Lebanon is called Turkish coffee. A part of my heritage, these recipes have been handed down from mother to daughter for generations and f...

The Scent of Pomegranates and Rose Water

The traditions of Syrian cooking go back hundreds of years, and is notable for its sensory components, in which aroma and texture are as important as taste and nutrition. Over the centuries, the unique dishes of Greater Syria (bilaad al-shaam) were preserved by those who cooked them. For cooks in imperial households, family homes, or on simple peasant farms, recipes were handed down from generation to generation. Despite centuries of occupation, unrest, economic hardships, and political strife, the people of Greater Syria continued to cook their burghul, lentil, chickpeas, kishk, and yogurt dishes as if life around them never changed. Syrian-born Habeeb Salloum and his daughters Leila Sallou...
