Verifying the quality of virgin olive oil is of international concern. The objectives of this study were to develop new or improve existing analytical methods for the quality evaluation of virgin olive oil, which can be used as alternative or assist sensory tests. A new standard for olive oil quality has been proposed that relates the ratio of 1,2-diacylglycerol (DAG) to 1,3-DAG to sensory evaluations of olive oil.
