This volume originates in a conference session that took place at the 2018 International Council of Archaeozoology conference in Ankara, Turkey, entitled "Humans and Cattle: Interdisciplinary Perspectives to an Ancient Relationship." The aim of the session was to bring together zooarchaeologists and their colleagues from various other research fields working on human cattle interactions over time. The contributions in this volume reflect well the breadth of work being undertaken on the ancient relationship between humans and cattle across the continents of Europe, Africa and Asia, and from the late Pleistocene to postmedieval period. Almost all involve the study of archaeological cattle remains and use different zooarchaeological methods, but the combination of these approaches with that of ethnography, isotopes and genetics is also featured. Cuenca, sus tierras, sus gentes, su pasado y su presente constituyen un sujeto de estudio fascinante al que, paradójicamente, no se le ha prestado la debida atención. Apenas ha concitado el interés de algunas reuniones científicas de mérito, que, así mismo, no han llegado a generar una continuidad suficiente para generar un espacio de debate dinámico, riguroso y en constante actualización, capaz de convocar la participación y la colaboración de investigadores consagrados y de jóvenes investigadores para comprender cada vez más y mejor ese pasado que hacemos presente. Este libro, y el congreso sobre el que descansan sus estudios, ha tenido por objeto contribuir a la generación de ese espacio desde una perspectiva rigurosamente científica, procurando profundizar en un pasado que corre desde la Prehistoria hasta la actualidad; siempre con la finalidad de servir de catalizador y difusor de un conjunto de propuestas científicas de altura que permitan aportar nuevas interpretaciones y un conocimiento más riguroso y profundo de este sujeto histórico que es Cuenca: sus tierras y sus gentes.
