The purpose of this Special Issue “Cow’s Milk and Allergy” is to provide an overview of the association of cow’s milk with allergy. This topic has two quite different faces. On the one hand, we are all aware of the importance of cow’s milk allergy in early life. What is less known is that the consumption of raw, unprocessed milk is associated with a lower incidence of asthma and rhinitis. This Special Issue takes a closer look at all of these aspects of cow’s milk and allergy and focus on the following questions: -Mechanisms of cow’s milk allergy -Epidemiology of cow’s milk allergy -Prevention of cow’s milk allergy -Management and immunotherapy of cow’s milk allergy -Milk processing, baked milk, and cow’s milk allergy -The consumption of raw milk and inhalation allergies
Milk proteins have nutritional value and extraordinary biological properties. Research over the last decades has provided new insight into the structure and the function of milk bioactive peptides. Some of these peptides are delivered directly into milk, and some are encrypted in major proteins such as caseins and lactoglobulins. These peptides have antimicrobial functions modulating the gut microflora. Even when milk is undisputedly the first food for mammals, milk proteins sometimes can be a health threat, either because of allergic reaction or because of toxicity. In this regard, in vitro studies showed donkey's casein and major whey proteins to be more digestible than cows' for human consumption. In this book, readers will find updated research on the major milk proteins' structure, bioactive peptides, milk protein allergy, therapeutic strategies, and chemical markers that can be used to detect cow milk intolerance in infants. This book provides the most current scientific information on milk proteins, from structure to biological properties. It will be of great benefit for those interested in milk production, milk chemistry, and human health.
This book examines property legislation and the actual position of women in receiving, holding and passing on family property as daughters, wives and as widows throughout history. Traditionally the prevailing view has been that women have been disadvantaged in the distribution of property and therefore less interesting as objects of study. This volume challenges this view and explores the securing of property for families or for individuals through transfers in the shape of dowries, marriage contracts, wills and other arrangements, as well as how women used and distributed the property they were holding.The scope of the volume is both urban and rural, analysing the position of women in relation to family property through contributions from a wide geographic area. The chapters investigate the situation in southern and northern Europe, across the Atlantic and Africa throughout the 18th to the 20th century. This volume will be of value to academics, undergraduates, postgraduates and scholars interested in gender and history and social history.
