Chemoprevention is currently regarded as one of the most promising avenues for the control of cancer, with human epidemiological and animal studies indicating that the risk of cancer may be modified by changes in diet. Over 100 papers are collected in this volume, the proceedings of the International Conference on Food Factors: Chemistry and Cancer Prevention, held in Hamamatsu, Japan, in December 1995. Special emphasis is placed on chemical, biological, and molecular properties of phytochemicals in teas, fruit, vegetables, herbs, and spices, and on their potential for cancer prevention. Also discussed are the cancer-preventive effects of vitamins, lipids, carotenoids, flavonoids, and other components of diet. The findings presented here will be invaluable to all who are interested in diet and cancer prevention, and especially to biochemists, pharmacologists, food scientists, and nutritionists.
A veritable mountain of literature has been published showing the causal relationship of reactive oxygen/nitrogen species in human disease conditions, and there has been an explosion in the understanding of oxidative stress, the protective role of antioxidants and molecular events involved in the regulation of transcription, editing, and translation of key events leading to disease processes. Strategies need to be developed for prevention of diseases by allowing scientists and clinicians to obtain information on new and emerging advances. The molecular mechanisms involved in several diseases including Alzheimer's disease, atherosclerosis, diabetes, arthritis, and Parkinson's disease, as well as disorders of the eye, skin, cardiac, and pulmonary systems are discussed in this volume, along with scientific evidence supporting the value of dietary supplementation with antioxidants in the prevention of cellular damage leading to chronic disease. Special in vivo techniques are also discussed at length, along with the role of molecular studies in human risk assessment.
Considerable progress in our understanding of tumor promotion has been made by cancer researchers throughout the world. In addition, scientists in several other disciplines have made significant contributions in elucidating the pleiotropic effects of tumor promotion. This international symposium was specifically convened to review research progress in these areas and to consider the relevance of these findings to human cancer causation and prevention. The proceedings include the contributions of leading researchers from Europe, Japan and the USA. Several papers report the exciting progress made in understanding how tumor promoters act at the cellular and biochemical levels. Elsewhere attention is focused on tumor promotion as an important phase in the occurrence of certain human tumors. It is hoped that advances in the understanding of the mechanism of tumor promotion in experimental systems will lead to new and effective approaches to human cancer prevention. The proceedings will be of interest and value to researchers working in cancer research, biochemistry, molecular genetics, mutagenesis and cell biology.
