The first chapters guide the reader through the phenomenology of supercooled liquids and structural glasses and provide the tools to analyze the most frequently used models able to predict the complex behavior of such systems. A fundamental outcome is a detailed theoretical derivation of an effective thermodynamic potential, along with the study of anomalous vibrational properties of sphere systems. The interested reader can find in these pages a clear and deep analysis of mean-field models as well as the description of advanced beyond-mean-field perturbative expansions. To investigate important second-order phase transitions in lattice models, the last part of the book proposes an innovative theoretical approach, based on a multi-layer construction. This book offers an in-depth study of two well-known models of “avalanche” dynamics, modified minimally by the inclusion of relaxation. Many complex systems respond to continuous inputs of energy by accumulation of stress over time, interrupted by sudden energy releases called avalanches. The first model studied is the viscoelastic interface driven over disorder, which is shown to display the fundamental features of friction. In the mean-field limit, the friction force derived semi-analytically is compatible with laboratory experiments (displaying both velocity weakening and contact aging). In two dimensions, large-scale numerical simulations are in good agreement with the basic features of real earthquakes (Gutenberg-Richter Law, aftershock migration). The second model is a non-Markovian variant of Directed Percolation, in which we observe that the universality class is only partly modified by relaxation, a promising finding with respect to our first model.

The study of fluctuations in statistical physics has a long history, and a general theory is well established, connecting fluctuations to response properties of equilibrium systems. Remarkably, this framework fails as soon as some current is flowing across the system, driving it out of equilibrium. The presence of currents is quite common in nature and produces rich phenomena which are far from being included in a general framework. This thesis focuses on this general problem by studying different models such as granular materials and systems exhibiting anomalous diffusion and shows how the generalized response techniques can be successfully used to catch the relevant degrees of freedom that drive the systems out of equilibrium. This study paves the way to the use of the generalized fluctuation relations in an operative way, in order to extract information from a non-equilibrium system and to build the corresponding phenomenological theory.
