Antioxidants
Antioxidants are substances that can prevent or slow damage to living cells caused by free radicals, which are unstable molecules the body produces as a reaction to environmental and other pressures. Sometimes called “free-radical scavengers,” free radicals can cause mutation in different biological compounds such as protein, nucleic acids, and lipids, which lead to various diseases (cancer, cardiovascular disease, aging, etc.). Healthy foods are considered a main source of antioxidant compounds and from the beginning of a person’s life, a strong relationship is seen between antioxidant compounds and the prevention of certain diseases, such as types of inflammations, cardiovascular diseases, and different kinds of cancers. It is thus of great importance that new data relating to antioxidants and their biological activity be collected and that antioxidant modes of action be illustrated.Experts from around the world contributed to the current book, discussing antioxidant sources, modes of action, and their relation to human diseases. Twenty-five chapters are presented in two sections: Antioxidants: Sources and Modes of Action and Antioxidants Compounds and Diseases.
Advanced Nanotechnology and Application of Supercritical Fluids
Globalization and industrialization involve a number of reactions, products, extractions, and separations that require the use of organic solvents. These solvents are responsible for a number of ecological concerns, including atmospheric and land toxicity. Conventional organic solvents are regarded as volatile organic compounds; some are even limited due to their potential for ozone layer depletion. While supercritical liquids exhibit physical properties that could make them ideal substitutes for these volatile compounds, there is particular interest in the use of carbon dioxide as a solvent of crude material. In particular, carbon dioxide has apparent ‘green’ properties, like its noncombustible nature, the fact that it is generally nonpoisonous, and its relative inertness. Thus, the use of supercritical carbon dioxide can provide practical improvements to the sustainability of industrial products and processes. This book provides in-depth literature in the area of industrial green processes, focusing on the separation, purification, and extraction of compounds utilizing supercritical carbon dioxide as a green solvent.
Biochemistry and Health Benefits of Fatty Acids
Fatty acids are considered as a very important category of chemical compounds to human health as well as from an industrial perspective. This book intends to provide an update on fatty acid research, their methods of detection, quantification, and related diseases such as cardiovascular disease and diabetes. Cyclic fatty acids are also covered, along with short chain fatty acids, which are important to the human gut microbiota. Fatty acids are important in the chemical structure of the cell membrane and its pivotal role in this aspect is reviewed herein. The book also contains a chapter that deals with some unpublished molecular aspects concerning the roles of fatty acids in depression and bipolar disorder. All in all, the book provides a brief overview of both highly explored as well as overlooked perspectives of fatty acids, while highlighting its significance as a biochemical molecule, which is imperative to the livelihood of unicellular and multi-cellular organisms alike.
