Healthy Agriculture, Healthy Nutrition, Healthy People

Human health depends to a great extent on our nutritionally balanced food supply consistent with the evolutionary aspects of diet to which genes were originally programmed to respond. The publication at hand contains selected papers from the Inaugural Conference 'Healthy Agriculture, Healthy Nutrition, Healthy People' of the World Council on Genetics, Nutrition and Fitness for Health held at Ancient Olympia, Greece, in October 2010. Topics include the relationship between architecture and agriculture, food production systems and urban agriculture, as well as physical activity, nutrition, genetic variation and other determinants of human health. The Healthiest Diet for You: Scientific Aspects is unique in a sense because it focuses on the most recent advances in Nutrition, Metabolism, and Genetics that are the basic components of Personalized Nutrition. The book also emphasizes the importance of evolutionary aspects of diet and exercise and the need to select foods that are consistent with the evolutionary aspects of diet because these are the foods that contain the nutrients that our genes are programmed to respond. This book is the antidote to ultra-processed foods and imitation foods that are proinflammatory and contribute to increases in chronic diseases, especially cardiovascular disease. It is a book for Health! The aim of the book is to provide readers with the basic factual information necessary to comprehend the enormity and potential effects of nutrients and foods on overall health and well-being. This book should be of interest to the educated public, teachers, health professionals, physicians, medical students, nutritionists, dietitians, historians and policy makers.

Teff: nutrient composition and health benefits

Teff (Eragrostis tef), has been cultivated and used for human consumption in Ethiopia for centuries. However, teff’s global use for human consumption has been restrained partly due to limited knowledge about its nutrient composition and the processing challenges faced in making teff-based food products. Over the past decade, the recognition that teff is gluten-free has raised global interest. Consequently, literature on the nutritional composition, processing quality, and health benefits of teff has grown considerably. The existing literature suggests that teff is composed of complex carbohydrates with slowly digestible starch. Teff has a similar protein content to other more common cereals like wheat, but is relatively richer than other cereals in the essential amino acid lysine. Teff is also a good source of essential fatty acids, fiber, minerals (especially calcium and iron), and phytochemicals such as polyphenols and phytates.
