Concerning Amines: Their Properties, Preparation and Reactions attempts to describe the accumulated knowledge on the properties of amines. This text first discusses nitrogen atom contained in amines, along with the basicity, geometry, nomenclature, occurrence, reaction, and preparation of these derivatives of ammonia. This book then explains the stereochemistry of the amino group and of quaternary ammonium compounds. Amine salts; absolute configuration of asymmetric amines; and influence of amino group are also tackled. This text also looks into the amino group in heterocyclic aromatic systems. This book concludes by explaining the syntheses of heterocyclic amines, enamines, and further reactions of carbonyl compounds with amines, including the Eschweiler, Vilsmeyer, and von Braun reactions. This publication will be invaluable to those interested in studying the properties of amines, such as chemists and students of chemistry.
The understanding of amine chemistry is of paramount importance to numerous chemical industries, as well as academic research. This book provides an authoritative account of the properties and applications of amines with respect to the characteristics of bonded substituents and the nature of their surrounding chemical and physical environments. The synthesis of alkyl, aryl and heterocyclic amines and inorganic amines with a review of their typical reactions is comprehensively treated, whilst practical synthetic and analytical methods for laboratory preparation and detection are provided. The importance of amine chemistry from the nineteenth century to the modern day, with a brief history of the development of ammonia synthesis, is included.
This first comprehensive presentation of this hot and important topic compiles the most up-to-date methods for chiral amine synthesis. The international list of authors reads like a "Who's Who" of the subject, providing a large array of highly practical information concentrated into the useful and essential methods. Following an introductory chapter devoted to helping readers quickly determine which strategies to choose for their investigation, this handbook and ready reference focuses on the examination of methods that are reliable and simultaneously efficient for the synthesis of structurally diverse aliphatic and aromatic chiral amines. Modern methods and applications found in (pharmaceutical) industry are also covered.
A precise analysis of biogenic amines is important as an indicator of food freshness or spoilage that can cause serious toxicity. This book provides comprehensive background information on biogenic amines and their occurrence in various foods and drinks such as fermented and non-fermented sausages and fish products, cheeses, vegetables and beverages, e.g. beer, cider and wine. It gives a detailed description of both the established analytical methods and the emerging technologies for the analysis of them. As the first book on the detection of biogenic amines in all types of food, it provides help to get a better understanding of the risks associated with biogenic amines and how to avoid them. It serves as an excellent and up-to-date reference for food scientists, food chemists and food safety professionals.

Biogenic amines are nitrogenous organic bases of low molecular weight with biological functions in animals, plants, microorganisms and humans. Their formation in food is either the result of endogenous amino acids decarboxylase activity in raw food material or the breakdown of free amino acids due to the action of microbial decarboxylase enzymes. Consumption of food containing excessive amounts of these amines can have toxicological implications due to their psychoactive and/or vasoactive properties. Therefore, the control of biogenic amines accumulation in foods during processing and storage is a challenge for the food industry. This book reviews origins, biological importance and human hea...
Biogenic amines (BAs) are low-molecular-mass organic bases that occur in plant- and animal-derived products. BAs in food can occur by free amino acid enzymatic decarboxylation and other metabolic processes. Usually, in the human body, amines contained in foods are quickly detoxified by enzymes such as amine oxidases or by conjugation; however, in allergic individuals or if monoamine oxidase inhibitors are applied, the detoxification process is disturbed and BAs accumulate in the body. Knowing the concentration of BAs is essential because they can affect human health and also because they can be used as freshness indicators to estimate the degree of food spoilage.
