Sucede que, com a desmaterialização, com a evolução - constante - ao nível do digital, nos situamos numa esfera desprotegida. As provas e os meios de prova confundem-se, unem-se e surgem, muitas vezes, associadas ao digital: quer no momento da sua criação, quer no momento do seu armazenamento, quer no momento efetivo da sua produção perante um julgador. Hoje, aqui e agora, urge conhecermos melhor o potencial da blockchain na realidade probatória, no processo e ousarmos utilizar o que de tão bonito e evolutivo temos à nossa mercê: ferramentas. The importance of processing and packaging food items so that they are safe for the consumer cannot be underestimated. Sensors have an important role to play in this, and sensing technologies have attracted the attention of the scientific community in view of increasing environmental and societal concerns. This edited volume presents a collection of ten chapters discussing the current trends of bio- and nano-sensing technologies for processing and packaging of food items.
