This edited collection explores the historical dimensions, cultural practices, socio-economic mechanisms and political agendas that shape the notion of a national cuisine inside and outside of Japan. Japanese food is often perceived as pure, natural, healthy and timeless, and these words not only fuel a hype surrounding Japanese food and lifestyle worldwide, but also a domestic retro-movement that finds health and authenticity in ‘traditional’ ingredients, dishes and foodways. The authors in this volume bring together research from the fields of history, cultural and religious studies, food studies as well as political science and international relations, and aim to shed light on relevant aspects of culinary nationalism in Japan while unearthing the underlying patterns and processes in the construction of food identities.

Due to the increasing linkage of global production sites, the concept of commodity chains has become indispensable for the investigation of production at a global scale. Although work is the basis of production in every involved location, it is often being neglected as a research subject without taking interest in the workers, the work processes and the working conditions. This edited volume provides a collection of historical and contemporary commodity chain studies by placing labor at the centre of analysis. A global historical perspective demonstrates that splitting production processes to different, hierarchically connected locations are by no means new phenomena. This book represents an in-depth analysis of journalism in Japan during the golden era of the daily press and the gradual introduction of digital technology starting from the mid-1980s to the late 2010s. By presenting firsthand testimony from journalists and field notes collected from fieldwork in the newsroom of one of the country's largest newspapers, this book provides a unique insight into Japan's highly active yet relatively under-institutionalized journalistic profession.
