Ruminant physiology
This book contains key contributions to the Xth International Symposium on Ruminant Physiology. Proceedings from past ISRP symposia have had a major influence on research and teaching in animal science over the years. Without a doubt the peer-reviewed chapters in this book, written by some of the best scientists in the field, will live up to this fine tradition. The chapters cover a wide range of topics spanning from digestion and absorption to metabolism, reproduction and lactation. Advancement of knowledge within important issues related to rumen fermentation, absorption mechanisms and splanchnic metabolism is treated in nine chapters. A number of chapters address the relationship between nutrition and gene expression illustrating important progress in scientific knowledge that can be obtained by applying the molecular biology methods to the field. Several chapters address the effects of nutrition on immunology and cover topics related to the health and welfare of production animals. In keeping with the increased attention on the relationship between food and human health, the book contains two important chapters on this topic.
Global Landscape of Nutrition Challenges in Infants and Children
Malnutrition among children remains a persistent problem around the world. This publication aims to map the challenges within the global landscape of childhood nutrition and considers the importance of nutrition both prior to conception and in children beyond two years of age. Session I provides an updated picture of malnutrition around the world, the recent progress that has been made in eliminating malnutrition in all its forms and several data limitations to track such progress. The role of milk in early life is covered in session II. The chapters describe different aspects of cow’s milk and the possible role of optimized plant proteins as an alternative to dairy ingredients in treating children with severe acute malnutrition. Session III considers the ramifications of environmental constraints to healthy child growth. The chapters cover the issue of how persistent gut damage and systemic inflammation can precipitate malnutrition as well as the putative effects of alterations in the gut microbiota. This overview of diverse issues is relevant to the epidemiology, biology of nutrition in early life, programmatic implications, and future directions.
Milk and Milk Products in Human Nutrition
Milk, the first and for a time only source of nutrition for mammals, influences early growth and development and may provide a foundation for health throughout the entire lifespan. It is therefore mandatory that milk substitutes have a composition which fulfills the same goals and confers as close as possible the overall health benefits of human milk. Moreover, in many populations, milk continues to play a major role in a healthy and balanced diet throughout life: During childhood, pregnancy and adulthood, intake of cow’s milk has important beneficial effects on linear growth, bone development and the risk of developing caries, and it is important in the prevention and treatment of undernutrition in low-income countries.This publication contains the presentations and discussions of the Nestlé Nutrition Institute Workshop held in Marrakech in March 2010. It focuses on three main topics: milk during pregnancy and infancy, milk during childhood in low- and high-income countries, and general aspects of milk in adult nutrition. Together, these contributions cover most aspects of milk during the life cycle in a global perspective, making the publication a comprehensive textbook.

Early Nutrition and its Later Consequences: New Opportunities
Health problems such as hypertension, tendency to diabetes, obesity, blood lipids, vascular disease, bone health, behaviour and learning and longevity may be ‘imprinted’ during early life. This process is defined as ‘programming’ whereby a nutritional stimulus operating at a critical, sensitive period of pre and postnatal life imprints permanent effects on the structure, physiology and metabolism. For this reason, academics and industry set-up the EC supported Scientific Workshop -Early Nutrition and its Later Consequences: New Opportunities. The prime objective of the Workshop was to generate a sound exchange of the latest scientific developments within the field of early nutrition to look for opportunities for new preventive health concepts. Further, a closer look was taken at the development of food applications which could provide (future) mothers and infants with improved nutrition that will ultimately lead to better future health. The Workshop was organised by the Dept. of Pediatrics, University of Munich, Germany in collaboration with the Danone Institutes and the Infant Nutrition Cluster, a collaboration of three large research projects funded by the EU.
