Ubi jalar atau “sweet potato” diduga berasal dari benua Amerika. Diperkirakan pada abad ke-16, ubi jalar menyebar ke seluruh dunia terutama negara-negara beriklim tropis. Bangsa Spanyol dianggap berjasa menyebarkan ubi jalar ke kawasan Asia terutama Jepang, Filipina, dan Indonesia (Fajar, 2013). Tanaman ubi jalar bervariasi sesuai varietasnya. Masing-masing varietas memiliki tekstur, warna kulit, ukuran umbi, dan warna daging yang bervariasi. Warna umbi ubi jalar yang ditemui antara lain kuning, oranye, putih, jingga, dan ungu (Purbasari et al, 2018).
