This book deals with the fundamentals of key physiological mechanisms involved in the development and growth of fish larvae. Chapters included show how the environmental and nutritional conditions are affecting the developmental process from its molecular basis and how these same conditions also influence the final characteristics of late larvae and fry. This volume provides recent findings on the importance of environmental rhythms, some specific nutrients and the adequate microbial environment in the developmental processes including recent results of current research projects.

In the past 20 years micronutrients have assumed great public health importance and a considerable amount of research has lead to increasing knowledge of their physiological role. Because it is a rapidly developing field, the WHO and FAO convened an Expert Consultation to evaluate the current state of knowledge. It had three main tasks: to review the full scope of vitamin and minerals requirements; to draft and adopt a report which would provide recommended nutrient intakes for vitamins A, C, D, E, and K; the B vitamins; calcium; iron; magnesium; zinc; selenium; and iodine; to identify key issues for future research and make preliminary recommendations for the handbook. This report contains the outcome of the Consultation, combined with up-to-date evidence that has since become available.
Marine habitats are promising sources to identify novel organisms and compounds. A total of 70% of the planet’s surface is covered by ocean, and little is known about the biosphere within these habitats. In the last few years, numerous novel bioactive compounds or secondary metabolites from marine environments have been described. This is, and will be, a promising source of candidate compounds in pharma research and chemical biology. In recent years, a number of novel techniques have been introduced to the field and it has become easier to actually (bio-)prospect compounds such as enzyme inhibitors. Those novel compounds then need to be characterized and evaluated in comparison to well-known representatives. This Special Issue focuses on the description of novel enzyme inhibitors of marine origin, including bioprospecting, omic approaches, and structural and mechanistic aspects.

Food chemistry is the study of chemical processes and interactions of all biological and non-biological components of foods. The biological substances include such items as meat, poultry, lettuce, beer, and milk as examples. It is similar to biochemistry in its main components such as carbohydrates, lipids, and protein, but it also includes areas such as water, vitamins, minerals, enzymes, food additives, flavours, and colours. This discipline also encompasses how products change under certain food processing techniques and ways either to enhance or to prevent them from happening. An example of enhancing a process would be to encourage fermentation of dairy products with lactic acid; an example of a preventing process would be stopping the Maillard reaction on the surface of freshly cut Red Delicious apples whether by hand or mechanical methods.
