This book constitutes the refereed proceedings of the 11th Latin American Symposium on Theoretical Informatics, LATIN 2014, held in Montevideo, Uruguay, in March/April 2014. Controlling, measuring, and "designing" the color of food are critical concerns in the food industry, as the appeal of food is chiefly determined visually, with color the most salient visual aspect.
