La remolacha azucarera, o betabel, como era conocido este cultivo por los jornaleros mexicanos, se introdujo en Estados Unidos en los años posteriores a la Guerra Civil. Ese conflicto destruyó los campos cañeros de Luisiana y provocó un aumento desmedido en las importaciones de azúcar desde el Caribe. Como consecuencia, autoridades gubernamentales y empresarios optaron por este tubérculo como una fuente de endulzantes.
