The paper reviews cephalopods as raw material for processing industry, provides basic information on systematics and distribution of commercially important species, as well as their biological structure, chemical composition and nutritive value. Handling and processing methods of cephalopods at sea are reviewed. Products and product development, with emphasis on those available in Japan, are described and discussed. Methods used for quality assessment, as well as quality requirements in the trade, are given. Problems of the consumer acceptance of cephalopods are discussed.

This document was written by Kim Un-yong, member of the International Olympic Committee (IOC) and Vice-President of the Organizing Committee for the 1988 Olympic Summer Games which took place in Seoul. It traces the history of these Games from 1981, when the Games were awarded to the city of Seoul during the 84th IOC Session in Baden-Baden, until their closure in 1988. It evokes in particular international relations with the Republic of Korea, the preparations, the obstacles related to the situation between the two Koreas, the organization of the Games, television rights, cultural events and ceremonies, the press and broadcasting, logistics, marketing and finances of the Games and finally the opening of South Korea to the world thanks to the Games.
