Scope: The classification of researchers and scientists in Greece in a unified list based on the citation impact and dissemination level of their scientific work according to Google Scholar database. Classification criteria: First criterion is h-index. In the case of equal h-index, the following scientometric indicators are used for the classification. The number of total citations, the i10-index, the total impact factor of scientist, the m-index or m-quotient of scientist. Information resource: The h-index, citations and i10-index derived from the public profiles of researchers in the Google Scholar database. How are the ways that race organizes our lives related to the ways gender and class organize our lives? How might these organizing mechanisms conflict or work together? In Digesting Race, Class, and Gender, Ivy Ken likens race, class, and gender to foods - foods that are produced in fields, mixed together in bowls, and digested in our social and institutional bodies. In the field, one food may contaminate another through cross-pollination. In the mixing bowl, each food s original molecular structure changes in the presence of others. And within a meal, the presence of one food may impede or facilitate the digestion of another. At each of these sites, the "foods" of race, class, and gender are involved in dynamic relationships with each other that have implications for the shape - or the taste - of our social order.

Nutritionism

Popularized by Michael Pollan in his best-selling In Defense of Food, Gyorgy Scrinis's concept of nutritionism refers to the reductive understanding of nutrients as the key indicators of healthy food—an approach that has dominated nutrition science, dietary advice, and food marketing. Scrinis argues this ideology has narrowed and in some cases distorted our appreciation of food quality, such that even highly processed foods may be perceived as healthful depending on their content of "good" or "bad" nutrients. Investigating the butter versus margarine debate, the battle between low-fat, low-carb, and other weight-loss diets, and the food industry's strategic promotion of nutritionally enhan...

Food Carotenoids

Carotenoids were first studied as natural pigments, then as precursors of vitamin A, and then as bioactive compounds against chronic diseases. These compounds have been and continue to be the subject of intense research worldwide, now with an expanded scope. Food Carotenoids: Chemistry, Biology and Technology gathers all the important information about these major compounds which impact both food quality and human health. It integrates in one volume various aspects of food carotenoids, such as: Structures and physicochemical properties Biosynthetic pathways and metabolism Analysis and composition of foods Stability and reactions during processing Commercial production as food colorants and precursors of aroma compounds Bioavailability and health benefits Having worked with carotenoids in various aspects for 44 years, Delia Rodriguez-Amaya is uniquely placed to pass on her wealth of knowledge in this field. This book will serve as solid background information for professionals in Food Science, Food Technology, Nutrition, Agriculture, Biology, Chemistry and Medical Sciences, whether in the academe, industry, governmental and non-governmental agencies.
