Membrane Hydration

  • Published: 2015-10-05

  • Publisher: Springer

This book is about the importance of water in determining the structure, stability and responsive behavior of biological membranes. Water confers to lipid membranes unique features in terms of surface and mechanical properties. The analysis of the hydration forces, plasticiser effects, controlled hydration, formation of microdomains of confined water suggests that water is an active constituent in a water-lipid system. The chapters describe water organization at the lipid membrane–water interphase, the water penetration, the long range water structure in the presence of lipid membranes by means of X-ray and neutron scattering, general polarization, fluorescent probes, ATR-FTIR and near inf...

Permeability and Stability of Lipid Bilayers

This book presents a comprehensive and coherent picture of how molecules diffuse across a liquid that is, on average, only two molecules thick. It begins by characterizing bilayers structurally, using X-ray diffraction, and then mechanically by measuring elastic moduli and mechanisms of failure. Emphasis is placed on the stability and mechanical properties of plant membranes that are subject to very large osmotic and thermal stresses. Using this information, the transport of molecules of increasing complexity across bilayers is analyzed.

Electrical Double Layers in Biology

A number of apparently unrelated phenomena in biological systems (e.g., biopolymer aggregation, cell-cell interactions, ion transport across membranes) arise from the special properties of charged surfaces. A sym posium entitled "Electrical Double Layers in Biology", which took place at the Toronto meeting of the Electrochemical Society, 12-17 May 1985, focused on the common features of these phenomena. The papers presented at that symposium are collected here and they illustrate ways in which an under standing of electrical double layers can elucidate a problem in Biology. An example of this approach can be seen from the paper I presented on ion transport and excitation, where the "unusual"...

An eclectic mix of studies on chemical and electrochemical behaviour of membrane surfaces. The book looks at membranes - both organic and inorganic - from a host of different perspectives and in the context of many diverse disciplines. It explores the behaviours of both synthetic and biological membranes, employing physical, chemical and physiochemical perspectives, and blends state-of-the-art research of many disciplines into a coherent whole.

Low water activity (aw) and dried foods such as dried dairy and meat products, grain-based and dried ready-to-eat cereal products, powdered infant formula, peanut and nut pastes, as well as flours and meals have increasingly been associated with product recalls and foodborne outbreaks due to contamination by pathogens such as Salmonella spp. and enterohemorrhagic E. coli. In particular, recent foodborne outbreaks and product recalls related to Salmonella-contaminated spices have raised the level of public health concern for spices as agents of foodborne illnesses. Presently, most spices are grown outside the U.S., mainly in 8 countries: India, Indonesia, China, Brazil, Peru, Madagascar, Mexi...
