Factors in Formation and Regression of the Atherosclerotic Plaque

Interest in the field of atherosclerosis research has broadened in recent years. However the main focus remains on the physiopathology of the arterial wall and on its interaction with blood constituents. The purpose of this NATO Advanced Study Institute on "Factors in Formation and Regression of the Atherosclerotic Plaque" was to discuss the following points: a) The physiopathology of the arterial wall; b) Animal models; c) Methods of studying the progression and regression of atherosclerotic lesions quantitatively; d) The role of lipoproteins, platelets, smoke, alcohol, etc. in the formation of atherosclerotic lesions; e) The pharmacological and dietary control of "risk factors." This volume is a collection of the most relevant presentations on these topics. We hope it will provide a background for young scientists as well as a stimulus for further research to biologists and clinicians. We wish to acknowledge the support of NATO and the Nutrition Foundation of Italy in organizing this Advanced Study Institute.

Nutrition and Health: Topics and Controversies explores in detail the relationship between diet, nutritional status, and disease, and evaluates nutritional practices intended to minimize the incidence of and slow the progress of major chronic illnesses. National trends in nutritional awareness and the resulting changes in consumer behavior are discussed. Unlike other books on this subject, the authors take a stand on controversial issues in the field and document their positions with scientific data. Nutrients such as calcium, vitamin E, selenium, and antioxidants, their importance in overall nutrition, and their role in specific diseases are covered. Expertise in nutritional science is not required to gain the highly practical information in this book.

Structural Modified Food Fats

Focuses on fats which have recently been synthesized and which are currently used in diseased states or have potential for clinical nutrition such as partial glycerides, structural lipids, salatrims, and triglycerides with specified fatty acid combinations or enriched in specific fatty foods. Chapters address technological aspects of fat modification, the synthesis of foods with specific nutritional properties, aspects of the metabolism of structural modified lipids, and the effect of fat structure on lipemia and lipoproteinemia. Growth, Nutrition, and Metabolism of Cells in Culture, Volume 1, summarizes the state of knowledge of the growth, nutrition, and metabolism of various types of cell cultures. The chapters are both detailed and comprehensive enough for the specialist and broad enough to provide a general background for the nonspecialist. The present volume discusses the uptake, synthesis, and degradation of biologically important compounds, particularly the major components usually present in tissue culture medium. The book begins by tracing the history of the development of tissue culture. This is followed by separate chapters on early development of cell culture nutrition; the biological effects of serum; the energy metabolism of malignant cells; the gaseous environment of the mammalian cell in culture; and the uptake and utilization of amino acids by cells in culture. Subsequent chapters cover purine and pyrimidine metabolism; lipids in cell culture; the use of cell cultures for sterol metabolism studies; the genetic expressions of human diploid fibroblast cell cultures; and structural features of mammalian complex carbohydrates.

Medical Aspects of Dietary Fiber

Medical Aspects of Dietary Fiber

Dietary therapy has always been important to medical practice even if it has more often been sacramental than physiological in effect. "You are what you eat" meant a lot to primitive tribes whose new leader had to eat part of his predecessor, and giving diets brought out the priest in the physician even if he or she had heard that "nothing that enters into a man defiles a man. " What people eat began to take on new meaning, however, a generation ago when Schoenheimer and others made clear that body fat and muscle protein were not the sluggish unchanging masses they had appeared but instead were store houses of energy and material influenced by food, activity, and metabolic pro cesses. Fiber,...

Dietary Fats and Health

Abstracts: This collection of proceedings provides the latest scientific information in fat chemistry and technology as related to nutrition, the general role of fats in nutrition, metabolism of isomeric fats, and the role of vitamins A, D, K, and E in health and disease. The role of lipids in heart disease and cancer, and the effects of diet on the high density lipoproteins were also discussed.
