Adequate fiber in the diet is essential for maintaining gastrointestinal and cardiovascular health and for weight management and glycemic control. But a majority of people in developed countries fall short of their recommended daily intake. Designed for product developers, nutritionists, dietitians, and regulatory agencies, Dietary Fiber and Health discusses critical findings from the Ninth Vahouny Fiber Symposium about the significance of dietary fiber and ways to get more fiber in our diet. Steeped in research and the latest data from international experts, the book explores a range of topics related to this essential nutrient, including: The relationship between fiber and weight managemen...

Nutrition and Growth

The science of nutrition has advanced beyond expectation since Antoine La voisier as early as the 18th century showed that oxygen was necessary to change nutrients in foods to compounds which would become a part of the human body. He was also the first to measure metabolism and to show that oxidation within the body produces heat and energy. In the two hundred years that have elapsed, the essentiality of nitrogen-containing nutrients and of proteins for growth and maintenance of tissue has been established; the ne cessity for carbohydrates and certain types of fat for health has been docu mented; vitamins necessary to prevent deficiency diseases have been identified and isolated; and the requirement of many mineral elements for health has been demonstrated. Further investigations have defined the role of these nutrients in metabolic processes and quantitated their requirements at various stages of development. Additional studies have involved their use in the possible prevention of, and therapy for, disease conditions.

Nutrition and Immunology

Historically, nutrient deficiencies have been of greater concern than dietary excess. However, along with the realization that deaths due to certain diseases are more prevalent in affluent countries came the conclusion that nutritional excess is of equal or in greater concern in many nations. Because immunologic reactions may play a role development of both cancer and atherosclerosis, better understanding of these interre lated phenomena may lead to innovative ideas for control of these diseases. There has been considerable interest in the role various nutrients may play in regulating immunologic responses. This has been especially true as a possible mecha nism by which fat modulates growth ...

Dynamics of Arterial Flow

This volume contains the edited transcript of the Second Topical Colloquium based on leads developed at the original conference on the artery and the process of arteriosclerosis (the Lindau Conference of 1970). The first follow-up colloquium on "The Smooth Muscle of the Artery" was held in Heidelberg in 1973. Planning for the present one was undertaken by the editors with Dr. C. Forbes Dewey, Department of Mechanical Engineering, Massachusetts Institute of Technology, Cambridge, Massachusetts. The meeting itself was held June, 1976 at the Delaware Water Gap, Pennsy1vani~, under the joint sponsorship of Totts Gap Institute and the Massachusetts Institute of Technology with financial support f...

Dietary Fiber

Only 15 years ago a conference on dietary fiber, let alone an international conference, would have been considered an extremely unlikely, and in fact an unthinkable, event. Yet in recent years a number of such conferences have taken place at the international level and in different parts of the world; the conference of which the present volume is an outgrowth is the second to have been held in Washington, D. C. This extraordinary development of interest in a hitherto largely neglected component of diet has been reflected by a veritable explosion of scientific literature, with published articles increasing 40-fold, from around ten to over 400 per year, within the decade 1968-1978. Not only ha...

Hormones and Energy Metabolism

The Twelfth Annual Midwest Conference on Endocrinology and Metabolism continued the tradition of selecting a topic of inter est to a wide variety of scientists with interests in biology. The conference an "Hormones and Energy Metabolism" was dedicated appro priately to Dr. Samuel A. Brody, a leader in research in this field as described by Professor Johnson in this volume. A particular feature of these conferences has been the large proportion of time devoted to discussion of each paper and the pub lished proceedings have included edited transcripts of these dis cussions. Unfortunately, due to malfunction of the recording sys tem, major portians of the discussions were lost and, despite much...
