Minyak atsiri atau juga bisa disebut minyak eteris, minyak terbang, atau essential oil adalah hasil panen berupa ekstrak dari hampir semua bagian tanaman rempah seperti bunga, daun, ranting, kulit, dan buah. Hasil ekstraksi tersebut banyak dipergunakan dalam bidang industri parfum, kosmetik, essence, farmasi dan flavoring agent. Komponen-komponen dengan jumlah kecil seperti resin dan lilin terkandung di dalamnya dan umumnya terbagi menjadi dua golongan, yaitu hydrocarbon yang terbentuk dari unsur hidrogen (H), dan karbon (C) yang terdiri dari persenyawaan parafin, olefin, dan hidroarbon aromatik. Selain itu, oxygenated hydrocarbon yang terbentuk dari unsur Hidrogen (H), Karbon (C), dan Oksigen (O). Buku ini berisikan materi tentang karakteristik jenis tanaman, kandungan yang terdapat di dalam tanaman, kandungan bahan aktif dalam tanaman, metode pembuatan minyak atsiri dari tanaman dan aplikasinya.
