This collection features three peer-reviewed literature reviews on reducing antibiotic use in dairy production. The first chapter describes the regulatory control of medicines in the United Kingdom and European Union and discusses the wider implications of antimicrobial use in dairy production and the need for change in the way we view and use medicines. The chapter also proposes how medicine prescribing practices in the dairy industry may undergo a series of changes in the near future. The second chapter considers recent advances of disease prevention in dairy cattle. Using bovine respiratory disease as a model, the chapter investigates key interactions between the host, environment and pat...

Food and Society in Classical Antiquity

Food and Society in Classical Antiquity

This is the first study of food in classical antiquity that treats it as both a biological and a cultural phenomenon. The variables of food quantity, quality and availability, and the impact of disease, are evaluated and a judgement reached which inclines to pessimism. Food is also a symbol, evoking other basic human needs and desires, especially sex, and performing social and cultural roles which can be either integrative or divisive. The book explores food taboos in Greek, Roman, and Jewish society, and food-allocation within the family, as well as more familiar cultural and economic polarities which are highlighted by food and eating. The author draws on a wide range of evidence new and old, from written sources to human skeletal remains, and uses both comparative historical evidence from early modern and contemporary developing societies and the anthropological literature, to create a case-study of food in antiquity.

Wine Microbiology and Biotechnology presents developments in fermentation technology, enzyme technology, and technologies for the genetic engineering of microorganisms in a single volume. The book emphasizes the diversity of microorganisms associated with the winemaking process, and broadens the discussion of winemaking to include more modern concepts of biotechnology and molecular biology. In each chapter, recognized authorities in their field link the scientific fundamentals of microbiology, biochemistry, and biotechnology to the practical aspects of wine production and quality. They also provide relevant historical background and offer directions for future research.

According to a report from the U.S. Centers for Disease Control and Prevention (CDC), achieving safe and healthier foods was one of the top ten achievements of public health in the 20th century. However, considerable persisting challenges currently exist in developed nations and developing economies for further assuring the safety and security of the food supplies. According to CDC estimates, as many as 3000 American adults, as an example, and based on a recent epidemiological estimate of the World Health Organization, around 420,000 individuals around the globe, lose their lives annually due to foodborne diseases. This emphasizes the need for innovative and emerging interventions, for furth...

Applications and Systematics of Bacillus and Relatives

Inspired by the pace of change in the taxonomy of the aerobic endospore-forming bacteria, the "Bacillus 2000" symposium on which this book is based was held in Bruges, Belgium, in August 2000, and was supported by the Federation of European Microbiological Societies, the Belgian Society for Microbiology, and several commercial sponsors. Bringing taxonomists interested in Bacillus and its relatives together with people who work with these organisms in medicine, agriculture, and industry, allowed those attending to appreciate the overlaps and interactions of their areas of expertise, in the absence of any comprehensive treatment of the current systematics of the group. The meeting was a great ...

Chicken Egg Yolk Antibodies, Production and Application

Polyclonal antibodies, widely used in research and diagnostics, are conventionally isolated from the blood of immunised mammals. The fact that antibodies can also be detected in the yolk of eggs laid by immunised hens, led to the development of the yolk antibody technology as an alternative method less stressful to animals. Hens can be kept under nearly natural conditions and antibodies be isolated from the eggs. Further, the IgY-technology has the advantage that avian antibodies can be produced against several antigens which do not induce a immune response in mammals. Protocols on how to keep and immunise hens and on the extraction, isolation and use of antibodies from yolk are described in detail in this manual. For their work on yolk antibodies the authors received the FISEA (International Foundation for the Substitution of Animal Experimentation, Luxembourg) prize in 1997.
