Sur la rive droite de la Loire, la construction en Anjou de la grande levée a isolé, à partir du XIIe siècle, une vallée étroite irriguée par un ancien bras du lit majeur du fleuve. Dans la plus grande partie de son cours, cette rivière prit le nom d'Authion. Le sol de cette vallée doit à son lointain passé, d'avoir été enrichi par les sédiments déversés régulièrement par le fleuve. L'agriculture n'a cessé d'y prospérer, à partir du XIVe siècle, au fur et à mesure des travaux de déforestation et d'assainissement des plaines humides, en mettant à profit la douceur du climat ligérien et la progression des techniques avec des sols de plus en plus aisés à travailler. Le livre s'attache à mettre en valeur le quasi acharnement de la population paysanne, notamment pendant tout l'Ancien Régime, pour garder la maîtrise de cette évolution, face aux intérêts des princes et grands financiers. Enfin, des réflexions sont présentées sur l'adaptation actuelle aux nouvelles populations, aux nouveaux cadres de vie et d'environnement.
