The demand for organic foods has been expanding at a steady rate, and during the COVID-19 epidemic, it increased even further, as consumers regarded these foods as healthier and better for immunity than conventional foods. This book covers all aspects of organic agriculture and how to transform organic agriculture into processed foods for global demand after the COVID-19 pandemic. The chapters discuss the post-COVID-19 impacts on organic agriculture and processed food, as well as recent milestones in basic and applied organic agriculture and organic food product sectors. Current issues such as international policies, intellectual property rights protection, the global scenario of organic certification, regulatory framework, and hindrances for farmers and organic food value chain participants are discussed. In addition, valuable chapters related to the production of nutraceutical organic foods like soy protein hydrolysate, fox nuts (Euryale ferox), and Red Dacca bananas are incorporated into the volume.

Donato Manduzio's Diary, from Church to Synagogue

Donato Manduzio was an illiterate Southern Italian peasant who only learned how to read and write at the age of thirty-two, while convalescing from a wound during the First World War. His subsequent reading of Scripture and the visions he experienced led him to turn to Judaism and to seek an official conversion for himself and seventy-odd followers. For twelve of the sixteen-year-long process, Manduzio wrote about his experiences. Although some excerpts from the Diary have been translated, the manuscript has remained unpublished either in Italian or in any other language up to this day. This book translates the full text of Manduzio’s Diary from the original Italian into English, making it...

Non-communicable diseases (NCDs) are chronic diseases that include most ageing-related diseases, representing the main cause of death and disability in the general population. Inflammation and oxidative stress are common features in NCDs, responsible for the cell, tissue, and organ damage that contributes to the progression of these diseases. They may be also key targets for the development of novel preventive and therapeutic strategies. This Special Issue includes 14 peer-reviewed papers, including 12 original research papers and 2 reviews. Together, they represent the most recent progress in the field of several degenerative disorders, aiming to establish specific biomarkers, detailing the pathogenesis and the evolution of these diseases, making a correct diagnosis, and opening up new therapeutic strategies. Of relevance, many studies report the beneficial effects of natural compounds, derived from several plants, leaves, and fruits; their antioxidant and anti-inflammatory properties suggest their use as a dietary supplement for prevention and/or complement to standard therapies.
