Vinegars of the World

Vinegars can be considered as acidic products of special importance for the enri- ment of our diet, and resulting from the desired or controlled oxidation of ethanol containing (liquid) substrates. The traditional use and integration of vinegars in numerous cultures can be traced back to ancient times. In fact, the cultural heritage of virtually every civilization includes one or more vinegars made by the souring action (of micro-organisms) following alcoholic fermentation. It has been do- mented that the Egyptians, Sumerians and Babylonians had experience and tech- cal knowledge in making vinegar from barley and any kind of fruit. Vinegar was very popular both in ancient Greece and Rome, wh...

Therapeutic Advances in Inflammatory Bowel Disease: Current Therapies and Future Directions

Inflammatory bowel diseases (IBD), are chronic and progressive diseases. Long-term complications are demolition surgery and colon-rectal cancer (CRC). A treat-to-target approach aims to modify the natural course of these diseases. Targets are pre-defined therapeutic goals demonstrated to prevent end-organ disfunction and disability in the long-term period. According to the Selecting Therapeutic Targets in Inflammatory Bowel Disease (STRIDE) indications, mucosal healing (MH) and clinical remission are the main targets in IBDs. Recently, the concept of remission and evidence on new targets included histological remission and transmural healing as future new targets. It remains controversial whether achieving these targets is associated with significantly better long-term disease outcomes. In this Research Topic, we aim to systematically review current evidence and future perspectives on therapeutic targets in IBD including mucosal and transmural healing.

Elastography of the Liver and Beyond

This volume explores the main applications of elastographic techniques in hepatological and gastroenterological diseases, and elaborates on the use of these diagnostic techniques in a broad range of clinical settings; in this regard, it provides a clear critical methodological approach to the correct indication, taking into account the existing diagnostic pathways, the actual diagnostic accuracy of elastographic techniques, and their impact on clinical practice in terms of correct positioning of the test in the diagnostic pathway and clinical outcomes improvement. In the first chapters, which focus on the correct methodology for Diagnostic Accuracy Assessment of non -invasive techniques, the architecture of diagnostic research is discussed. In turn, the following sections describe a broad range of clinical applications in hepatology and gastroenterology. The closing section presents a number of case studies on practical issues, together with a critical discussion on how to promote the appropriate use of these technologies. Given its scope, the book will be of interest to specialists, post-graduate medical students, and researchers in the fields of hepatology and gastroenterology.
