La remolacha azucarera, o betabel, como era conocido este cultivo por los jornaleros mexicanos, se introdujo en Estados Unidos en los años posteriores a la Guerra Civil. Ese conflicto destruyó los campos cañeros de Luisiana y provocó un aumento desmedido en las importaciones de azúcar desde el Caribe. Como consecuencia, autoridades gubernamentales y empresarios optaron por este tubérculo como una fuente de endulzantes. Cuando la siembra de remolacha se expandió, las compañías azucareras estadounidenses contrataron a miles de trabajadores mexicanos para su cuidado y cultivo. Se formaron entonces núcleos de población de origen mexicano en los campos cercanos a las refinerías de azúcar que utilizaban esta planta como insumo. Hasta ahí llegaron representantes del Partido Liberal Mexicano (plm) buscando apoyo logístico y económico para hacer frente al gobierno de Porfirio Díaz. La obra que el lector tiene en sus manos analiza las condiciones sociales que generó este cultivo y que propiciaron también la expansión del plm en varias zonas agrícolas del suroeste de Estados Unidos.
