Food quality and safety issues continue to dominate the press, with most food companies spending large amounts of money to ensure that the food quality and assessment procedures in place are adequate and produce good and safe food. This holds true for companies and laboratories responsible for the processing of fish into various products, those responsible for researching safe new products, and departments within other companies supporting these functions. Fishery Products brings together details of all the major methodologies used to assess the quality of fishery products in the widest sense. Subject coverage of this important book includes chapters on assessment of authenticity, and severa...
Basing their research on geophysics, oral legends, and archaeology, the authors offer evidence that the flood in the book of Genesis actually occurred.
An internationally respected editorial team and array of chapter contributors has developed the Handbook of Fermented Meat and Poultry, an updated and comprehensive hands-on reference book on the science and technology of processing fermented meat and poultry products. Beginning with the principles of processing fermented meat and ending with discussions of product quality, safety, and consumer acceptance, the book takes three approaches: background and principles; product categories; and product quality and safety. The historical background on the fermentation of meat and poultry products is followed by a series of discussions on their science and technology: curing, fermentation, drying an...
As coastal populations burgeon, problems of erosion, pollution and coastal change are becoming ever more serious and necessitate scientifically informed management strategies. This authoritative new study discusses the causes of, and possible solutions to, some of the more pressing problems at the coast, against a background of the natural geomorphological and ecological workings of coastal environments. A holistic approach to the understanding of coastal problems is suggested, which integrates geomorphology, ecology and society through a consideration of the basic processes at work. Coastal problems are caused by both human and natural impacts, often working in conjunction with each other; ...
This handbook provides guidance on methods for use in fish ageing studies. Fish age, among other biological parameters, is one of the most relevant pieces of data to attain sustainable exploitation levels of fishery resources. Indeed, most analytical methods used in stock assessment require knowledge of demographic structure according to age of stocks, as well as to recruitment, growth, maturity, natural mortality, etc., which are strictly linked to information on age and age structure. The handbook was put together to deal with identified gaps – which affect both the precision and the accuracy of estimations – regarding ageing schemes, criteria and methodologies used in preparing calcified structures. It focuses on the general principles that underpin age analysis (assignment of birth date, preparation methods, aging scheme reading and identification of true and false rings). Crucially, it aims to contribute to the establishment of common analysis methods, which can enable better calibration across the diverse institutes involved, thereby improving the quality and reliability of results.
With growing consumer demand for ready-to-eat (RTE) foods that are wholesome and require less handling and preparation, the production of RTE foods has increased and their variety has expanded considerably, spanning from bagged spinach to pre-packaged school lunches. But since RTE foods are normally consumed directly without cooking- a step that ki
This publication was prepared to promote and to provide support in the implementation of the Code of Conduct for Responsible Fisheries, especially Article 7 : Fisheries Management. As such, it also, supplements the FAO Technical Guidelines for Responsible Fisheries NO.4: Fisheries management. It is intended primarily for the practising fishery manager and decision-maker, with particular emphasis on developing countries, although it is hoped that the volume will also be of interest to managers in developed countries.
Farmed fish quality is a developing area of concern and has been described as the aquaculture issue of the next decade. Fish product quality is inherently amenable to influence or control throughout the whole production chain and successful production of good quality fish and fish products is dependent upon the expertise of a wide range of scientists and practitioners from academia and industry. This important and most timely book has arisen from an international conference on farmed fish quality held at the University of Bristol, U. K. The comprehensive contents cover farmed fish quality in its widest sense, and include the basis of fish quality, the influence of husbandry, handling, slaugh...
