Lipases are of high practical relevance. They exhibit activity only at the water-lipid interphase and can thus be utilized for various industrial applications such as detergents and chiral synthesis. Up to now, however, progress in industrial use has been hampered by the lack of fundamental knowledge about lipase structure and function. With the information this GBF monograph provides, scientists will finally be able to develop and exploit lipases in their own work.
